Glycerin Monostearate

Glycerin monostearate or mono 90, as it is also known, is made from fully hydrogenated palm oil. It is an additive for the food industry. Functions as a dispersing, wetting and emulsifying agent in many food products. Reduces the interfacial tension between the water phase and the fat phase in emulsions, providing a final dispersion of water droplets. Thus, it can be used as an emulsifier. Mono 90 also performs well as a whipper in the production of freezing agents, generally combined with the convenient hydro-colloids. It works very well for the production of vegan products, or for people who are lactose intolerant and celiac. It is generally sold in 25kg bags.
